How we started

A delicious journey through Bombay’s culinary soul

We took a research trip to Bombay — not just to eat, but to deeply explore the essence of its legendary food. Our journey focused on finest ingredients, unearthing authentic recipes, and blending in modern twists on traditional dishes.

This experience is shaping our new menu — ensuring Colaba Canteen becomes your go-to spot for flavors that are innovative yet nostalgic.

Along the way, we visited the iconic Leopold Café, nestled in the heart of Colaba. With its colonial charm and a menu full of timeless comfort food, this café stands tall with stories, resilience, and the vibrant spirit of Mumbai. Whether you’re enjoying a Keema Pav, sipping a chilled beer, or relishing international bites — Leopold is where culture meets cuisine.

No trip to Bombay is complete without a visit to the legendary Bademiya. Since 1946, this street-side kebab haven has been firing up juicy tandoori meats, smoky skewers, and the city’s best chicken rolls. It’s more than just food — it’s a feeling.

And of course, we immersed ourselves in the delicate flavors of Parsi cuisine. One bite of a soulful Dhansak — rich with lentils, vegetables, meat, and layered spices — reminded us that some dishes don’t just feed, they tell stories.

Through every bite, Colaba Canteen is bringing that same emotion, warmth, and flavor to Chandigarh. From the lanes of Bombay to your plate — get ready for a taste you’ll never forget.

Why we started

A flavorful journey from Bombay to the City Beautiful

From the heart of Bombay to the soul of Chandigarh, we’re here to serve more than just food — we’re serving a story. A tale of authentic spices, rich textures, and unforgettable memories.

Colaba Canteen is born from the street-side soul of Mumbai — a city where every bite tells a tale. From sizzling Vada Pavs and buttery Pav Bhajis to nostalgic Bun Maska and crunchy Bhel Puris, we're recreating the magic with a fresh twist in Chandigarh.

Our roots also trace back to the legendary Kyani & Co., one of Bombay’s oldest Irani cafés. With its iconic Akuri, slow-cooked Dhansak, and thick, creamy Irani chai, Kyani showed us what timeless flavors can do. We're bringing that very legacy northward — with respect, passion, and originality.

But we’re not just replicating. We're infusing local ingredients and coastal charm to deliver dishes that are comforting yet bold. Our chefs roamed the markets, sipped countless chais, and crafted recipes that balance authenticity with a pinch of innovation.

It started in the bustling lanes of Colaba — where every chai tapri, every Irani café, and every paav stall had a story. Inspired by the heritage of Kyani & Co., Bademiya, and the local spirit of Bombay, we dreamed of bringing that energy to the heart of Chandigarh.

Today, Colaba Canteen is a bridge between cities — combining rich Parsi recipes, iconic street flavours, and the warmth of Bombay hospitality with the elegance of Chandigarh's calm charm.

Uncle Jack's was born out of a deep passion for food, community, and American diner nostalgia. What began as a dream in Chandigarh quickly turned into a sensation — redefining fast-casual dining in India.

With each brand — @unclejacksindia, @malleshwaramindia, @colabacanteen, @jackandthejuicee, and @heybambiindia — we told a new story. A story of vision, flavor, and identity.

F&B isn't just business — it's emotion, it's memory, and it's culture. From my first outlet to a thriving ecosystem of brands, every step has been an evolution of both food and feeling.
